Description
Oolong tea is one of the most popular teas in China and Taiwan. The
leaves are withered, rolled or cut, and then semi fermented. It is then
fired to stop the enzyme oxidation. Oolong tea is a category of green
tea that is slightly stronger in taste than Japanese Green Tea, but more
delicate than the fully fermented black tea. It can complement any kind
of food, but goes particularly well with oily food, and is often appreciated
as an after meal tea. It is one of the most enjoyable and exquisite teas,
and can be served as a hot or cold beverage in all seasons.
Oolong tea is amber coloured and has a rich honey-chestnut taste and fresh
aroma, with hints of fruit. The best Oolong tea is fresh, light and fragrant.
It can vary from sweet and nutty to strong and slightly bitter.

Slivery Tip Pekoe - Yin Zhen White Tea
A rare tea produced only in China, mainly in Fujian province, it
originally came from wild
mountain trees. It is hand picked from the ends of the branches for
premium slivery tip white tea, when the buds are fully grown an inch
long in spring, just before its open.
The buds are de-enzymized by steaming, not by rolling and
fermenting. The pale yellow brew has a mellow, sweet taste.
